Starting out back in 1986, Nanette and Maurice had a dream, to bring artisan baking to the people. Maurice, a pioneering, master baker whose skills were sought after worldwide, gathered together whilst on his travels, a collection of the very best partisans of fine produce he could find and with Nanette continued their mission to illuminate people to how simple, real food, made fresh with the very best ingredients can taste, right here in Cheltenham.

Today is no different, with Maurice on his globe-trotting journeys consulting for bakeries around the world, exploring and discovering unique ingredients and recipes, sharing them with us back home. Nanette continues the dream, championing her love for delicious, uncomplicated, staple favourites and bring the dream to life right here in Montpellier and Tivoli, Cheltenham.

Our passion

Some 14 years later, desire to adventure into new territory, and for sunshine took them to a small island community to live by the beach in Florida, and eventually back home to family and friends to open Maison Chaplais, the Deli in Tivoli, here in Cheltenham. The love for what they do has never diminished and it is with great excitement that they have grown, and now have 'Chaplais Deli' in Tivoli and have added to their now well established baking and deli repetoire some of their favourite dishes to have in and to take away at the new bistro cafe in Montpellier, ' Chaplais Kitchen'.

The staff enjoy and share a love of people and product, and look forward to welcoming you and continuing the conversation about what you and they mutually love, wonderful food from a wonderful journey, to share with friends and family.

Maurice Chaplais

Maurice Chaplais is an internationally renowned artisan bakery consultant who has taught his art form all across the world.Whether its a turnkey operation where Maurice's bakery consulting services helps with equipment, staff recruitment, recipes, and training, or just a top up where, as an artisan baker consultant he teaches the art of butter croissant, sourdough breads or Key Lime pies. Maurice, as a bakery consultant, can cover it all, either training novices or professionals alike.
